YOU DRESS IT UP

I was in shock when i brought my girl to a Noodle shop in vegas.... I am freaking CHOWING down on this stuff, loving it ( 3.99 a LARGE BOWL! hahahahaha) and for good reason, cheap date ;)

I notice she is not digging it the best... come to find out, she doesnt like it... i dont know HOW, she doesnt like the flavor of the broth, everything is so knew , textures .. etc.. Fella's.. this could be the turning point :r

I just thought i would lay that on you, i would have never have guessed someone could NOT like Pho... but i was mistaken :fl

Everybody in the world should like Pho! Some people say it doesn't have enough flavor, but not me :D $3.99?!?!

Had it today. Flank and soft tendon, meatballs on the side, more like $8, but worth it :dr

Re: Pho!

In the world of noodle soup Pho for me comes in 3rd.

1. Japanese Ramen. Real Ramen from a Ramen shop, not the cheap instant stuff you buy at the store. It's heavenly.

http://i102.photobucket.com/albums/m...ogie/ramen.jpg

2. Schezwan Beef Noodle Soup. Make mine extra spicy.

http://i102.photobucket.com/albums/m...e/Schezuan.jpg

3. Then finally Pho.

So, I finally got the basic recipe for pho from my Vietnamese friend and today I'm going grocery shopping for the essentials. Tomorrow morning, I start making my first pot of pho.

Wish me luck. :tu

You can always do it the cheap way too...
Beef broth in a can..
thinly sliced meat
sriracha sauce
Pho noodles

:tu Not as good as boiling beef bones 24+ hours but it'll hit the spot!

jquirit 03-23-2009 02:19 PM

Re: Pho!

I'm gonna simmer it for about 10 hours. I may be patient, but I'm not *that* patient.

Plus, I got an awesome tip of just freezing the broth and thawing/heating what I need later on.

Well, almost there forgot one thing.

The noodles.

How the **** did I forget that?! Here I am, unpacking everything from the grocery bags and then I notice my omission. Now I'm going to have to go back across town to Beaverton to pick some up.

Another (interesting) variation, except this time not using a store bought packet of SEASONINGS. :D

Though, I am disappointed by his pronunciation of pho. :r

Tomorrow I'll be sure to set-up my tripod and take pics of me preparing my pho. I have the ingredients, and I got the time. :D

Ooops. I kinda forgot to take pics. Then again, 8 hours of pics of a simmering pot ain't all that exciting, either! Started the simmer at 9am, and figure to have it done simmering somewhere around 4-5pm (all depends on when my ex-coworker and his wife shows up).

I'll take a pic of one when it's finally bowled up. That's fine, Sam? :tu

Vietnamese iced coffee is awesome! Usually you order it during your meal that way you have till your Pho is finished for the coffee to drip :tu

Re: Pho!

Well, my ex-coworker and his wife raved about it. Came out very good. I was happy with the results. Though next time, I need to remember to soak only half of a package of banh pho noodles (an entire package is TOO much).

So the dish consisted of my pho broth, noodles, viet meatballs with tendon inside, thin sliced (raw) top round, the simmered oxtail meat from the broth, Thai basil, bean sprouts, a squeeze of lime, a bit of hoisin sauce, and a bit of Siraccha.

So freaking good. Now my belly is full and content.

Well, I did invite Andy, his wife, and his kid... but they didn't make it. :(

And it's great pho. Not just good. Oh, and here's an interesting tidbit. You know, when you refrigerate the broth, it turns into gelatin? Found that out when I took out a small bowl of broth I refrigerated so I can have another bowl tonight for dinner.

Yeah I guess similar. Like Mugen said it's this metal thing over a cup with evaporated millk. The coffee drips slowly in. You get this very concentrated brew. Good stuff. You can buy the coffee, I think most places uses Cafe Dumonde...not sure if I got the spelling correct.

this is true ;) its what gives broth that.. well.. thick mouth feel even though it is still stock/broth...both meat and bones, compared to water.

Bones have HIGH gelatin content :hf

miss ya brotha, if only you lived in the middle of the U.S.. i would be driving past you place all the time !

NOW whats this recipe.. and how does it battle against your fav. pho house...

It's very comparable to what I've had at my local restaurants. This recipe came out a bit more sweeter than I had expected. Maybe from using regular granulated salt instead of the raw sugar, so next batch I'm gonna cut back on the sugar. But, none the less, it was very savory and delicious! You gotta make this Sammy, and tell me how yours comes out.

I've tried to get a few of my buddies to try this and they all turn up their noses... their loss. Now that fall is starting to move in I'm looking forward to eating this more, there's a great Vietnamese place within 1/2 mile of my house.

I love it with the rate steak and brisket... I can even do the tendon and tripe occasionally. :D

Extensive menu to me means they don't concentrate on the Pho.
