I just took the family out for pho. We eat it a couple times per week. I like the rare steak pho with chili paste placed on top of every chopstick pinch of rice noodles. I like it hot:fl
Brent.. mah man... you back in Atlanta at the end of the month? I know where there's Pho.

Start slow, stick to the Pho Tai basically a fragrent beef broth with rice noodles and slices of steak (usuall round steak). You can also sometimes get flank (or better yet fatty flank) and combos. Stay away from tendon, meatballs, tripe unless you otherwise like that. Add the fresh herbs, squeeze of lime that come with it, some chilli sauce and enjoy. In the BA your options food GOOD pho are limitless man. Get out and eat some!

I had some on Sunday at the restaurant in the building I moved into a few weeks ago. Pho Mein is the name of the chain. Pho, meh is the unfortunate result. It just didn't have the flavor I was looking for.
Now if you want some good Pho use the recipe I've included in this post. I don't recall exactly why this is a image file, must be a screen shot from whatever website it was originally found it on.
Okay, you can't really read it when it first expands the thumbnail, but if you click on it again it will bring it up large enough to read.
It's tasty, well worth figuring that bit out lol.

I love myself some pho! Portland has been seeing a resurgance of trendy pho restaraunts starting up. They recently opened up a Pho Tango about a mile from my workplace and their pho is pretty good. Though the best I've ever had was from an old coworker back in California, she did the broth from scratch. It was remarkable going into the kitchen and smelling the heady scent of the broth being made. Mmmmmm. Now I want pho for lunch!

All the AZ guys, the best pho in the Phoenix area is at Phu Than in Mesa off of Southern and Extension. If you do give it a try, be sure to stop by Habanos Torres for a cigar.

Just had my first Pho experience the other day due in large part to this thread. I had steak and meatballs.

In the world of noodle soup Pho for me comes in 3rd.
1. Japanese Ramen. Real Ramen from a Ramen shop, not the cheap instant stuff you buy at the store. It's heavenly.

2. Schezwan Beef Noodle Soup. Make mine extra spicy.

So the dish consisted of my pho broth, noodles, viet meatballs with tendon inside, thin sliced (raw) top round, the simmered oxtail meat from the broth, Thai basil, bean sprouts, a squeeze of lime, a bit of hoisin sauce, and a bit of Siraccha.

Yeah I guess similar. Like Mugen said it's this metal thing over a cup with evaporated millk. The coffee drips slowly in. You get this very concentrated brew. Good stuff. You can buy the coffee, I think most places uses Cafe Dumonde...not sure if I got the spelling correct.

Bones have HIGH gelatin content :hf

It's very comparable to what I've had at my local restaurants. This recipe came out a bit more sweeter than I had expected. Maybe from using regular granulated salt instead of the raw sugar, so next batch I'm gonna cut back on the sugar. But, none the less, it was very savory and delicious! You gotta make this Sammy, and tell me how yours comes out.

HA! Just saw this thread and loving it!
I've tried to get a few of my buddies to try this and they all turn up their noses... their loss. Now that fall is starting to move in I'm looking forward to eating this more, there's a great Vietnamese place within 1/2 mile of my house.
I love it with the rate steak and brisket... I can even do the tendon and tripe occasionally. :D

Theres a new place up here in Towson. Haven't been there yet, but they have an extensive menu. Not just pho.
Extensive menu to me means they don't concentrate on the Pho.

Me too Tim.

So I need to ask one of you that knows more about Pho than I do a question.
I got some Pho takeout last night and told them "all the meats except tendon and tripe". Cool.
One of the meats listed on there is "beef meat ball", and I assumed it to be a beef meatball. It looked like a meatball but when I ate it I could tell that it was a solid piece of meat and not ground meat. I'm thinking that it should have been on the menu as "beef meat, ball"...
Did I eat what I think I ate???

a special kind of meat ball made to have that exact texture and consistancy, very finely ground meat and a lot of kneeding when made at home!
