Do you have grates for different heights in the oven? In Switzerland, a similar style oven is quite popular, but is more exposed and can be used for BBQ. They do not use parallel grates, but kind of mesh material similar to fence weave (albeit much tighter).

Nope its just firebrick floor. We do a fair amount of pizza in it and high temp chicken wings. I also use the oven to make coals to feed the Argentinian grill when we have all day cookouts.

Vin, It's come along way since the PBC trade. I believe there was just a hole in the ground when you were here.
