Ok you read my mind. I just happened to see this. Now I am going to have to try and make these since I am Polish and from Milwaukee which I think is the home of the Friday Fish Fry.

I've not had a (read any) good latke since I left Sioux City back in the early 70's...

My dad made the best Potato Scones (Scottish) Nothing but mashed potatoes and flour made into a dough and flattened, fried and smothered in butter, salt and pepper (maybe cheese whiz)

I like to add some shredded leeks or green onions... Stir in a touch (1/4 tsp) of ground Tumeric; adds nice color to the oil and pancakes.

The wife's recipe.
You need to grate the potatoes and then squeeze all the water out, add the onions to the potatoes and stir in egg and salt.
1 pound potatoes
1/2 cup finely chopped onion
1 large egg, lightly beaten
1/2 teaspoon salt
Fry them in a little olive oil and make more than you think anybody could possibly eat. Yukon Gold potatoes make some really outstanding laktes. :D
