Only a few coals and small logs needed for a 4 hr smoke session

Rub down and membrane off ready to rock and roll

After 4 hours on the smoker a little Rudy's sauce goes on and they get moved to the fire box to crisp up

looking good!!!

Not knocking your ribs, but it always confused me that people spend hours smoking ribs... all to cover the meat with sauce/bbr sauce.
But then again, I like dry rubbed ribs.

I don't like em THAT wet, but I also have been converted from all dry to at LEAST sticky. Personally I like the clean
nature of the dry rack, covered in salty, spicy, crusty yumminess. But slather on some SBR and let em carmelize for an
hour and I am happier than ever.
