Jon...not a clue. Each "batch" has a bottle and a half (750ml) of Everclear and six-eight shots of Pinnacle Whipped Cream Vodka...with 3 gallons of juice/cider. I do know that it takes three pints to give me a buzz...and it tastes exactly like a slice of Apple Pie. :dr :dr :dr

The Pinnacle stuff looks to merely be flavored like whipped cream. Now on the other hand... "the world's first alcohol-infused whipped cream" (http://www.whippedlightning.com/)!

I had something like that with unsweetened apple juice, a cinnimon stick, and spiced rum. Rum = 1/3 of the mixture I believe. It tasted like apple cider, but hit like a truck. Gotta try making my own. :al



Edited to say: off Eva Mendes's a$$ would be one helluva place to drink any libation.

I need to make a new batch here soon (hopefully this coming weekend). Only downside to this is the cost of the alcohol, jars and postage (must be shipped in Medium Flat Rate to allow enough space to cushion jar properly.

To make a "batch"...it runs about $ 64.00 (total cost) to make 14 pints/7 quarts, this does not include shipping. But damn if it doesn't taste good. :dr

Ingredients:

1 gallon apple cider (make sure to get a legit cider. It makes for a better product.)
3 cups white sugar
1 table spoon of Vanilla Extract
8 cinnamon sticks (again, get a legit brand. Spend the extra cash.)
1.5 (750 milliliter) bottles 190 proof Everclear grain alcohol
6-8 shots of Pinnacle Whipped Cream Vodka

Directions:
In a large pot, combine apple juice, apple cider, sugar, vanilla extract and eight cinnamon sticks. Bring to a boil, then remove from heat and let cool completely (overnight preferred). When juice mixture is cool, Stir in the grain alcohol and place in jars.

Store in fridge. Before serving, shake the jar (cinnamon residue will float to the bottom), pour in a cup of ice, and drink up!!

Thanks for posting the recipe Mac. I went out yesterday and bought some cider, EC and the vodka. Mixed up a small batch, without knowing the rest of the ingredients. While it was good, I can see why it didn't taste completely like apple pie. Now to get the rest of the ingredients.

I'm still up for the trade. I want to try the original.

I have made this recipe and drank some of Mac's at EPIC. It's a great drink! If you want to kick it up a notch, you can use 1 1/2 cups white sugar and 1 1/2 cups brown sugar. That gives it more of an apple pie taste imo.

I would usually agree but I figured someone might say Drano, acid, bleach or something that could kill you. Therefore I had to add the "bottle for consumption".

Picked up the 190 proof Everclear and the whipped cream vodka in Rhode Island tonight. The other ingredients all just finished boiling, and our entire apartment smells exactly like someone just pulled an apple pie out of the oven! My mouth is already watering! :dr :dr

Yeah, as I was making it up last night, the fiancé says, "that smells just like apple pie. You're going to be a mess." I used an apple cider made from Honeycrisp apples, second in yumminess only to the Pink Lady.

Cinnamon residue gets really bad after a month or so and makes the 'shine "cloudy". But then again, it's a personal preference. It is YUMMY either way. :dr :dr :dr :dr :dr

the shine is cloudy enough as it is lol. i made a half batch and put in the quart jars. gonna try it as soon as it get nice and cold, just a sip to taste the flavor since i gotta work tonight.

I did the same thing as you Bobby, but mine yielded 9 pints. I figure it's roughly 18-20% alcohol. Since I've drank 4 pints of it. So tasty :dr

One of the benefits of being retired Army is that I can still use the class 6 store Cole. Virginia has a state law that only allows VA ABC stores to sell the 150 proof...whereas on post, I can still buy the 190 proof.

With the holidays fast approaching, a good supply of pie shine is a necessity! Which has got me thinking about ways to tweak the recipe... and I'm pretty sure mac has already tried a number of things, so here's a few questions for ya!

As the recipe stands now, I calculated it to be roughly 13% - 14% ABV

1) What would be the affect of using 2gal of cider instead of 1gal cider and 1gal apple juice?

2a) How about doubling the everclear and leaving all else constant - would the apple flavor get too watery?

2b) If one started with more apple mixture and cooked it down slowly until some evaporated, would the resulting more potent apple mixture offset the increased everclear content?

3) Ever try leaving the cinnamon sticks in the bottle of everclear for about a month prior to making the batches?

Got the idea of soaking the cinnamon sticks from when I made limoncello. have to soak the lemon zest in everclear for 2 weeks minimum... 3+ months if you want a reallllly smooth product.

Beyond that I have no experience with moonshining, so maybe it wouldnt work at all with the cinnamon!

Maybe a bit too weak for my tastes but it all depends on the person.

I'll make a third batch and tweak it a bit more, we'll see.

Only real danger of everclear is how high the alcohol content can be (hidden) in something. A bit of juice and you don't really taste it or realize how much (dangerously) you are drinking.

Everything is relative. There's much more juice and cider in it - to be exact, 83% of the recipe is non-alcoholic. That's more than enough to cut the everclear way down, all the way to around 13% abv, that's wine territory! double the everclear and you nearly double the ABV to around 25%. how safe is it at 25%? mmm, that's a good question, depends largely how smooth it is! I could easily drink a few quarts of the original before I realized how much i had consumed!

I'm heading to the grocery store tonight to pick up some supplies. Probably make a 1/3 or 1/4 sized batch. enough for a nice glass of thanksgiving joy, and also small enough to play with the ratios a little bit. Only have about 1L of everclear on hand right now.... need to make a supply run sometime.

I believe my last batch was ~23% ABV. So really not that bad. I'll be going up to around 28-30% for this third batch I make in about a month or so.

I intend on finding the ideal ABV-Taste ratio for myself.

I think that's the key. Going to be a different number for different people. Some want to drink a little and feel buzzed... others want to drunk of it liberally without fear of a hangover.

And of course, some folks can hold a lot more than others :)

I paid $15 each for 2 750s of 190 proof Everclear today. When I was in high school (I mean Grad School), this stuff cost $6.99 a bottle. Anyway. I used a gallon of cider and 3/4 of a gallon of juice, 1 cup sugar, 1 cup brown sugar and 10 cinnamon sticks. It finished boiling 2 hours ago and I'll let it cool until tomorrow morning. I will use the entire two bottles of everclear so I assume I will be approaching 20 ABV. Now to find something big enough to mix it in. The house smells lovely.

I've had some keep as long as 4-5 months in the fridge...the problem is getting it to last that long. :dr :dr

Only issue with storing in the fridge, is the sentiment that settles at the bottom of the jar...but after shakikng vigorously...problem solved. :tu

last batch I tried I started making with Cider, but discovered that the only cider available for me to buy in my area tasted like @$$, weak, watery, etc.

I found that this worked as a "passable" substitute - not on par with the batch I made in the fall (with fresh cider), but far superior to the batch made with the poor cider available. Same general 1:1 ratios as before, just use this instead of the cigar part.

yeah, I discovered that about 1/2 a cup of watermelon blunts per 2 gallons, finely ground up in a blender or coffee grinder, really serves to expand the character of the shine :)

1.5 tablespoons of Vanilla Extract
8 cinnamon sticks (again, get a legit brand. Spend the extra cash. McCormicks are perfect)
1.5 (750 milliliter) bottles 190 proof Everclear grain alcohol
8 shots of Pinnacle Whipped Cream Vodka

Directions:
In a large pot, combine apple juice, apple cider, sugar, vanilla extract and eight cinnamon sticks. Bring to a boil, then remove from heat and let cool completely (overnight preferred). When juice mixture is cool, Stir in the grain alcohol and and vodka, then place in jars.

Store in fridge. Before serving, shake the jar (cinnamon residue will sink to the bottom), pour in a cup of ice, and drink up!!

As for shelf life, I've stored this stuff in the fridge for over a year, shook it up and still tastes delicious. :dr :dr :dr

Have you thought of getting rid of the vanilla extract and using real vanilla bean paste---I wouldn't cook it but mix it with a little of the Everclear to thin it into a liquid and then mix it in. I think 2 sticks would be good to start.
Should give another boost to the depth of flavor.

I'm hypoglycemic and followed this recipe almost all the way. All I did was substitute Diet AJ and Diet Cider for the real things and used Splenda. I also threw a few pinches of Apple Pie Spice in it to recover what was probably lost by using diet drinks.

Mac, the sugar free (probably about 5g of sugar per serving actually) has been a hit this football season and has even travelled to my gf's family reunion in NY and applauded. No one complains about the sugar free version.

It does taste much better with a couple weeks worth of rest.

B was thinking along that same line of getting a bigger pot but my burner would tend to make a single hot spot in the middle of the pot; and with all that sugar in the mix...probably burn. Much rather make up 2 separate batches.

Isn't an issue if you stir it ocasionally. Last three or four batches I have made have been double batches. Only real issue with making a double batch in one pot is that it takes forever to bring to a boil...like 75 minutes.

I made a batch of this about 2 weeks ago. I had to make my own cider (could not find cider hereabouts...the 20#'s of Gala apples only cost me $10.

I also use some whole All Spice, clove and vanilla pods...when first made up this is some potent stuff...but I think it will mellow out some.

Not really sure that would turn out...cider has gotta be fresh to to get the pie taste. Not sure the unfrozen stuff would work out too well. :2 Really never know until you try.

Was curious if the cider would taste different.

At Cider Hill farm where I use to live, obviously they make cider, and I noticed they sell whats leftover from the fall in the summer and its frozen in the jugs. Didn't know if anyone had any experience with that.

But after reading this page (should have done that first) seems like this stuff keeps really well. Might as well just make it now.

Hey Everyone! Forum newbie here.... I found this while researching my next batch and had to get into the conversation.

Back a few pages I saw the Simply Apple juice and started Googling. This seems to get awesome reviews and I'm game to try it... Soooooo, could I just use this instead of the juice/cider combo? Thoughts?

Also, where I can't find 190 proof Everclear I just found 190 proof Golden Grain made by the same company.... I usually add 9 ounces of booze (151 Everclear) to a quart jar and then top off to the line with the 'base'.

So Mac, on top of that 9 ounces of what will now be 190 Golden Grain you add almost a ounce per quart of the whipped cream vodka? Never tried that before.... Might give it a shot.

Made some with my buddy last night.. Didn't use your recipe. Went off of his. Matter of fact, I have never looked in this thread till now.

Not my recipe.. I take no credit at all.. and after reading yours, this one is weak.

My buddy made a 6 gallon batch, 3 gallon apple juice, 3 gallons apple cider and 3 5ths of grain alcohol. 3 cups of white and brown sugar and at least 10 sticks.

I will be making yours prolly next week... and surely sticking with yours.. for here on out.

Garry...has to be the cider you choose. I use a local seasonal cider that is "murky"...not as clear as the Tree Top. That's gotta be it.

It's the cider you guys are using. I'm buying a fresh cider from a local farmers market here in Virginia. I'm assuming you guys are buying a grocery store cider, which is known for a longer shelf life, but more processed than the fresh stuff.

Jason...I always store mine in the fridge. Have kept some in there for as long as nine months and it's still as good as the day I made it. Not sure about leaving it stored outside the fridge...I know I won't do it. :2

I've personally never re-used the sticks. After I cook it and it cools down, I toss the sticks. If you leave them in the jar, it gets too strong. I guess you could always try to re-use them. Not sure how strong the cinnamon will be.

I modified this great recipe to make a peach cobbler version.
Here is the recipe if anyone would like to try it.

Peach Cobbler Shine
Prep time 5 Min
Cook time 60 Min

Ingredients:
1 gallon peach grape juice
2 cups white sugar
3 table spoon of Vanilla Extract
6 cinnamon sticks (get a legit brand. Spend the extra cash.)
Sliced peaches
2 cups 190 proof Everclear grain alcohol
1 cup Whipped Cream Vodka
2 cup peach schnapps

Directions:
In a large pot, combine peach grape juice, sugar, vanilla extract, 1 cup peach schnapps, peach slices and three cinnamon sticks. Bring to a boil, simmer for
1 hour, then remove from heat and let cool completely (overnight preferred). When juice mixture is cool, Stir in the grain alcohol, 1 cup peach schnapps
and vodka. Add 1 peach slice in each jar and fill jars with mixture (strain while filling jars for smoother mixture).

Store in fridge. Before serving, shake the jar (cinnamon residue will float to the bottom), pour in a cup of ice, and drink up!!

I have one jar left in the fridge. Made a half batch a while ago, and accidentally used enough cinnamon for a full batch.

So, I cut it back down with apple juice, and add some vodka too kick the alcohol content back up.

Still works good for me. :D
