Too many to list, but I wanted to be a pastry chef... potential career change from burning out in high tech. I never finished the classes, but I still drool at various culinary artistry books or professionary pastry guides. I'm very afraid to go to Moe's place someday...

The only "staple" I have is the Joy of Cooking, although I've been meaning to get my hands on "The Silver Spoon". I have quite a few Italian and pizza-specific cookbooks as well.

Smoke & Spice
colorado collage
cajun cuisine
weber's art of the grill
I quite buying them because its easier to look up a recipe on the net and does not take up space.

If you like Cajun food; gumbo, jambalaya, etc., Chef Paul Chef Paul Prudhomme's - Louisiana Kitchen Cookbook (http://www.kpauls.com/site.php?pageID=347&iteminfo=1&productID=31) has a lot of good recipes.
