Is this a pic from the inside and did you drill through the cooler? If so, how did that go? From the picture it looks like its only plastic and styrofoam?

Yes from inside. I used the existing punch out from the factory just above the exterior drain hole. I pushed an ice pick through and found just insulation and plastic interior liner. I pushed through the liner to mark the hole and drilled from the interior out. Very easy. I used a 7mm cap nut/Teflon tape on the threads and an o-ring to seal exterior drain. I used the rubber plug to seal the interior drain.

This hole was drilled for the ETC (electronic temperature control)

Think I'll have to go this route as well (ETC), as my edgestar on the warmest setting seems to settle at 58-60.

Any recommendation to a decent ETC sub $100?

I was just looking into the same thing and stumbled upon this (http://cgi.ebay.com/Portable-Thermostat-W-Extended-Sensor-For-Fans-Heaters_W0QQitemZ180429346383QQcmdZViewItemQQptZLH _DefaultDomain_0?hash=item2a026d564f#ht_554wt_941) looks like it should work

The Ebay one looks like it is made in China. I would recommend this one:
