View Full Version : Easter Dinner, whatcha having?

It'll be a banner day up here at the lake house. Boat is in the water, furniture is on the deck and the cigars have been picked.

But, what's being cooked?

I got a 15 pound Prime Rib Roast that will be herb crusted, roasted and served with Horseradish cream sauce

A 17 pound Turkey that I brined in water, apple juice, tarragon, thyme, sage, rosemary and garlic for the past 30 hours. I am going to smoke it over hickory and put Scotch, Dr. Pepper and Apple Juice in a spray bottle to spray the bird down to create a glaze on it while smoking.

The dough is proofing for the spinach bread and olive bread

Penne ala Vodka (mom's recipe)

And homemade Sangria and other sides to pig out on.

Homemade Cannoli, chocolate covered strawberries, cheesecake, brownies and fruit for dessert. And oh yes, many CC's to smoke in between.

What about you?

PS: Breads are done, we made spinach and white cheddar, chipolte and monterey jack and yellow cheddar and a cured black olive and garlic bread. And the cigar selection has been made.

That's some meal! How many are expected over?

I'm cooking a lamb leg on the smoker today. Easter has the best meat deal sales of the year. We did a 5 lb semi-boneless on Friday.

I just put 30 pounds of ham on the smoker for double smoked ham. A bunch of family is coming here and bringing side dishes. I love just cooking meat!!!

What's double smoked ham?

I went to clean my smoker just now and it was still smoking from Friday night! I did not notice this at all on Saturday. I guess I do have a leak. The water pan was empty and I could grab both the lower grate and water pan with bare hands. I did not cover it after using it on Friday. I think the door is where it's leaking...

Started out with a great breakfast: thick sliced bacon, hash browns, and green chili fritada.

For dinner this evening - Green salad, 12 pound smoked ham (with brown sugar/pineapple glaze),
red potatoes, and carrots. :dr

My mother in law thought the same thing. We are having Tacos. I think that it has nothing to do with Easter though, becuase we have family dinner at my in-laws' every Sunday.

First Prime Rib came off and I lit up lunch, an ERdM Choix Supreme from 07. My daughter did the chocolate covered strawberries.

OK fellas, here's pics of the main event, the Herb crusted Prime Rib and the Smoked Turkey. I'll tell you what, I am never putting another turkey in the oven. Smoking is the way to go. This thing was perfect. My brother got 5 pounds of leftovers this morning.

I had roast duck for easter. It came out really well...and the best part is I now have 3/4 cup of duck fat in the freazer for future use. Anyone ever had duck fat fries? :dr
