Danielle got me this for Valentine's Day. It took me about 40 mins to assemble and I'm super excited. I've wanted this grill forever. It's a Weber Performer for anyone wondering the model.

That is an absolutely awesome cooker and I love the color!!! Looks like Gator blue to me so you know it will cook well.

BTW... If you get another charcoal grate and turn it 90 degrees you can use lump charcoal in there. You will like the results.

I would LOVE that... could probably talk the wife into it, too. She has never been west of the Mississippi. :D

Congrats on the new grill, I have always really liked that model. The problem I have with most charcoal grills is the need for an extra table to put stuff on and this one takes care of that and has storage underneath, perfect IMO :tu

When I am doing steaks on mine I have a big coffee can with both ends cut out that I put right in the center of the bottom of the kettle. Then I set the charcoal grate on top of the can. That way your charcoal is only a few inches away from the steaks and you can sear the heck out of them.

Give it a try sometime.

The adjustable coal height was great on my (RIP) Smokin' Pro.

Have you ever put the steaks directly on the hot coals for like 10 seconds a side and then cook regularly or indirect?

I have seen that done for skirt steak for fajitas, it looked awesome, just make sure you are using hardwood charcoal

Indeed. You can even do it before the charcoal point by putting the steaks on the burning log.

Yup, like 5 seconds a side and then cook indirect. You want searing temp, does not get much hotter than that.
