No doubt this guy uses fresh beans, but what else is he doing? It got me rethinking my tamp a little as he seems to have a different technique that appears much lighter than mine.
I get good crema, but this is just insane.

It seems that by using a bottomless portafilter you can diagnose packing and tamping problems from what you see it do.
