View Full Version : Birthday Ribs

Today is my step-son's 19th birthday. I asked him what he would like for dinner and he wanted ribs. Ask and you shall receive, 6 slabs worth. They went on about 30 minutes ago and should be done around 5PM or so and then go in the cooler for an hour or two until dinner. Also got some ABTs that will go on about two hours before dinner as well.

I'm smoking these with a mix of Apple and Peach wood (thanks Marc) and Bad Byron's Butt Rub.

Ribs are done. ABTs are on now. Smells real good around the house.

And the finished product. I do not sauce ribs on the smoker if you are wondering where the sauce is. I leave that up to the individual after it is on their place.

One thing I need to watch out for next time. These ribs butted right up against the side of the smoker and caused the very ends to burn. Next time I will trim either the ribs or that piece before serving.

All and all they came out very good. A very slight tug to the bone, but still melt in your mouth tender.

I don't sauce either. One person I gave them to thought I did. Maybe next time to prevent the burnt ends cook them on their sides rolled up. Heard that works.

I've seen them cooked that way and as far as I know they turn out fine. The ends were very thin meat and probably should have been trimmed from the start.

It always seems that the more you BBQ, the more things you find that you can do better. Always in search of that perfect cook. :)
